So I got rabbit that was slaughtered the day before I bought it from John Fazio farms, the same guy who supplies a lot of NYC restaurants with fresh ducks and rabbit at the farmers market on Tuesday. Made a marinade of onions, garlic, franks red hot, olive oil, black pepper, garlic powder, red pepper flakes, and this awesome lemon pepper spice blend from Singapore.
The rabbit marinated in this mix overnight ( I turned it once) then when I got home I braised it for an hour, added a 1\2 can of crushed tomatoes to the pan, 30 more minutes and its done… My plating job sucks again L I don’t even know what I could have done to make it look better but the taste was OUTSTANDING. Moist flavorful spicy everything one would want.
